The notorious N787BKOnce upon a time it was just used by Boeing for tests with their 787s, now it's a passe-partout mock 'registration' often used for 'none-of-your-beeswax', 'secret' test flights.
Given the proximity of Sigonella it's probably something US/Italian-NATO but your guess is as good as mine.
